Stir it up!
Being a new Dad is an exciting time but you also have to step up to the ‘plate’ like never before. You will need to support your partner so that she can recover from the birth of your bouncing baby, especially in the first few weeks. What better way to help her back to full health than with a simple home cooked and nutritious meal.
Check out this easy and quick recipe for Honey and Soy Chicken Stir Fry.
Ingredients
- 3 chicken breasts
- Small red onion
- 1 Red and 1 Green pepper
- Bean sprouts
- Handful of Sugar snap peas
- 1 clove of garlic finely chopped (or puree)
- 1 inch of ginger grated
- 1 tablespoon of honey
- 2 tablespoons of soya sauce
- 1 small red chilli finely chopped
- Sprinkle of pepper to taste
Method
- Cut the chicken into thin strips and set aside.
- Cut the vegetables into thin strips also and set aside.
- Heat some oil in your wok - preferably a vegetable oil.
- On a gentle heat, simmer the onions, garlic and ginger for 2 minutes or so until they begin to soften.
- Turn up the heat at this stage and add your chicken.
- Fry your chicken until it has turned white on both sides.
- Keep stirring the chicken. At this stage add the rest of the chopped vegetables, leaving the bean sprouts aside until the last minute.
- Stirring constantly so everything is getting an even chance of cooking.
When the vegetables are cooked - this should take 2 to 3 mins add your soya sauce, chilli and honey. Stir through and coat all the veg and meat evenly. Add your bean sprouts and stir again.
Your stir fry is now ready to eat.
You can use any vegetable that you like in a stir-fry just make sure to cut it thinly so that it will cook quickly.
